With Thanksgiving just a few days away, we’re kicking off the holiday season with some of my FAVORITE Holiday family recipes…just made HEALTHY(er). Now I grew up in the South, so mind you, it ain’t good Southern cookin’ without at least 2 sticks of butter and a cup of heavy whipping cream. However, I have found some fun and quite clever ways to take some of the favorites that I grew up on and make them a little easier on the arteries!

Today’s feature is my ABSOLUTE favorite Thanksgiving and Christmas dish…. SWEET POTATO CASSEROLE.

Before you continue reading for the recipe, you must know that I’ve made this dish at Thanksgiving for over 5 years now…and quite honestly, most people (except my DAD, because if he knows it doesn’t have the “good stuff” in it, he doesn’t want it) actually prefer this over the traditional 2000 calorie recipe. I think people really do prefer healthy dishes when they’re both good for you AND tasty.

Healthy-er Sweet Potato Souffle 

Ingredients

Souffle:

3 cups cooked and mashed sweet potatoes, from about 3-4 small baked sweet potatoes
1 ½ cups melted honey ( may substitute for regular sugar or 1/2 and 1/2)
3 egg whites
1/2 cup almond milk (or milk of choice)
1/2 cup applesauce
1 cup nonfat plain or vanilla greek yogurt
2 tablespoon vanilla extract
1/2 teaspoon salt
2 teaspoon pumpkin pie spice or cinnamon

Topping:

3/4 box cinnamon chex cereal (crushed)
1 cup chopped walnuts or pecans
½ bag small marshmallows
½ cup melted honey
1 teaspoon salt

Directions

Souffle: Preheat the oven to 400 degrees F. Lightly grease an 8-inch square baking dish. In a large bowl, combine ( I prefer using a blender and bleeding extremely well) all souffle ingredients. Cook without topping for about 30-35 minutes.
Topping: In a large bowl, combine cereal and nuts. Add melted honey. Mix well. After about 30 minutes, add crunchy topping and then top with marshmallows. Bake until marshmallows melt and are slightly brown on top.
Serve warm…this recipe actually tastes great leftover cold too 😉
